Wild Asparagus with Eggs at Louis Hotels

Today we would like to share an all-time-favourite Cypriote dish named Wild Asparagus with Eggs!

You will need:

Ingredients
Serves 3
2 bunches of wild asparagus spears
6 eggs
3 tbs of olive oil
salt and pepper

Instructions

Wash the asparagus and cut them down as far as the spears are tender.
Drain them and cut into smaller pieces. Make sure you do not keep any stalks that are too tough to eat.
Heat the oil in a small frying pan and sauté the asparagus. Toss them well. Break the eggs into the pan and stir it around to scramble it or if you prefer, you can turn it into an omelette. Add salt and pepper. Let it cook on moderate heat until the egg is cooked. Serve with lemon juice.
