Let’s make shieftalies
A classic Cypriot dish, Sheftalia is a staple of the local cuisine in Cyprus. These local sausages encompass rich succulent texture, complemented by fresh flavours. Let’s dive into this recipe so you can taste a bit of Cyprus in your own kitchen at home.
Ingredients:
- 100g bread
- ¼ teaspoon(s) cinnamon
- 1 teaspoon cumin
- ½ teaspoon coriander (powdered)
- 1 clove garlic
- Salt
- Pepper
- 2 tablespoons olive oil
- Parsley
- 1 tablespoon thyme
- 500g ground pork
- 350g caul fat (lamb)
Preparation:
Place a grill pan on medium heat. In a blender, add the cut-up bread pieces, cinnamon, cumin coriander, the garlic coarsely chopped, salt, pepper, blend until dissolved. Add the olive oil, thyme, parsley and beat slightly so that the ingredients combine.
In a bowl, add the ground pork, the blended mixture, mix very well using your hands.
Shape 18-20 meat patties and place them (on by one) into the lamb caul fat. Fold and set aside.
Add the sheftalies onto the grill pan. Make sure that the side where the caul fat is folded is facing down so that it will not open during grilling. Cook for about 10 minutes on both sides.
