While staying at Louis Hotels you’ll get to know Greece and Cyprus via the palate… first thing in the morning, as soon as you wake up.

Today we are sharing the Cypriot Rose Petals Preserve Jam recipe, an all-time-favourite jam found in our Cyprus Breakfast! All you who long for a taste of Louis Hotels can simply follow the instructions and enjoy!

Ingredients

  • 1 ½ cups water
  • 2 cups lightly packed wild rose petals (from a pesticide-free area)
  • 2 cups of organic cane sugar
  • 3 tbs fresh lemon juice
  • 1 tsp fruit pectin

Instructions

Firstly, place the water and roses in a saucepan and bring to a gentle simmer for 10 minutes. Then, add 1 ¾ cups of sugar into the simmering petals. Continue to stir to dissolve the sugar crystals. Then, add the 3 tbs of freshly squeezed lemon juice. Simmer for another 10 minutes. Mix the remaining 1/4 cup of sugar and pectin in a bowl. While stirring the jam add the pectin mixture sprinkle by sprinkle to ensure the pectin incorporates without clumping. Continue to simmer for 20 minutes.

And…viola! The Cypriot Rose Petals Preserve Jam is ready!
