Cyprus Grilled Halloumi with Caramelised Figs

Today let’s make Cyprus grilled halloumi with caramelised figs! Sound yummy, right?

You’ll need the following ingredients to serve four:

  • 400g halloumi cheese
  • 4 ripe figs
  • 4 tbs honey
  • 3 tbs balsamic vinegar
  • A few thin sticks of cinnamon

 

How to make this delicious dish:

First cut the halloumi carefully into slices just under 1cm thick. Then cut the figs in half, making sure you cut them vertically from the stem to the base.

After you’ve finished cutting the figs, mix the honey with a few tablespoons of boiling water to get it to a thin, pourable consistency in a small mug. Place two non-stick frying pans on the hobs and over a medium heat, heat a very small amount of olive oil (a teaspoon or so) in one of the pans. Place the figs, cut side down into the pan, cooking them for two minutes. Splash in the thinned honey. Turn the heat to low and add the cinnamon sticks. Gently turn the figs over occasionally and baste them with the honey mixture.

Finally, cook the halloumi slices for a few minutes on each side, until they turn golden in colour. When the halloumi is nearly ready, turn the heat up to medium under the figs, splash in the balsamic vinegar, and continue to reduce for two minutes.

Serve the halloumi and figs together as soon as the halloumi is cooked, pouring the glaze over both! Tell us what you think!
