Kokkinisto: A Traditional Cypriot and Greek Stew
Kokkinisto is a classic dish found in both Cypriot and Greek cuisine. In Greek, “kokkinisto” means “reddened,” referring to the dish’s vibrant red colour, which comes from being slow-cooked in a rich tomato-based sauce. Kokkinisto is traditionally made with either beef, lamb, or chicken, although pork is sometimes used. The slow cooking process makes the meat incredibly tender, absorbing the flavours of the aromatic sauce.
